Try redirecting stderr also:

/usr/IBM/WebSphere/AppServer/java/bin/java -verbose:class -cp "XXXXX" com.ibm.XXXX >>/home/user/log.log 2>&1

Your Java code might be writing on stderr that your command isn't redirecting.
